Turkey Veggie Meatballs

These turkey veggie meatballs are veggie and protein packed! We like to eat them for lunch and for snacks! 

They are Whole30 and Paleo approved! Woo!

Ingredients​ 

  • 2 carrots

  • 2 medium zuchinni's

  • 2 eggs

  • 1 lb ground turkey

  • 1/2 tsp cumin

  • 1/2 tsp minced garlic

  • salt to taste

Procedure

  • Preheat oven to 350 degrees.

  • Shred carrot and zucchini. I use a cheese grater. Once the zucchini is shredded, squeeze the water out with your hands. Discard the water, or put it in a soup or broth to get those nutrients.

  • Place the carrots and zucchini in a bowl, and crack the eggs and mix together with the veggies.

  • Add in spices and mix.

  • Add in ground turkey and mix together with the mixture in the bowl.

  • Roll the mixture into balls and place on a cookie sheet. I normally make fairly big meatballs, usually there are about 10.

  • Bake for 25 minutes, or until meatballs are cooked all the way through.

I like to serve them with avocado or with zucchini noodles and marinera sauce.
