

Turkey Veggie Meatballs
These turkey veggie meatballs are veggie and protein packed! We like to eat them for lunch and for snacks!
They are Whole30 and Paleo approved! Woo!
Ingredients

2 carrots

2 medium zuchinni's

2 eggs

1 lb ground turkey

1/2 tsp cumin

1/2 tsp minced garlic

salt to taste
Procedure

Preheat oven to 350 degrees.

Shred carrot and zucchini. I use a cheese grater. Once the zucchini is shredded, squeeze the water out with your hands. Discard the water, or put it in a soup or broth to get those nutrients.

Place the carrots and zucchini in a bowl, and crack the eggs and mix together with the veggies.

Add in spices and mix.

Add in ground turkey and mix together with the mixture in the bowl.

Roll the mixture into balls and place on a cookie sheet. I normally make fairly big meatballs, usually there are about 10.

Bake for 25 minutes, or until meatballs are cooked all the way through.
I like to serve them with avocado or with zucchini noodles and marinera sauce.
