

Stuffed Peppers
This is my one of my husbands favorite meals. It's super easy and Whole30 and Paleo approved!
Ingredients:

2 chicken breasts

2-3 orange, yellow, or red bell peppers (Red is our favorite)

1/4 cup butter plus 2 TBS (Ghee if you are Paleo or Whole30)

1 tsp onion powder

1 tsp garlic powder
-
1 tsp parsley (I usually use dried)

Sriracha sauce -- I do a few drops for the kids and I and then quite a bit more for my husband. It just depends on how much heat you like!

Salt to taste
Procedure:

Preheat oven to 350.

Season chicken with garlic powder, onion powder, salt, parsley and a table spoon of butter on each.

Bake for 25 minutes.

While the chicken is baking... cut the tops of the bell peppers off and rinse the seeds out. Also, you can start melting your butter in a sauce pan on low. Once the butter has melted add your Sriracha and stir.

Once the chicken is done take it out of the oven and with two forks carefully shred it.

Pour the butter/Sriracha mixture over the chicken and stir until the chicken in evenly coated.

Stuff the peppers with the chicken and place in pan to bake-- I like to use my muffin tin for the peppers, it holds them up well.

Bake another 15 minutes until bell peppers are soft.
My family likes a side of caulirice served with this meal, but I am sure it would be great with regular rice or tortilla chips too!
