    Stuffed Peppers

    This is my one of my husbands favorite meals. It's super easy and Whole30 and Paleo approved!

    Ingredients:

    • 2 chicken breasts

    • 2-3 orange, yellow, or red bell peppers (Red is our favorite)

    • 1/4 cup butter plus 2 TBS (Ghee if you are Paleo or Whole30)

    • 1 tsp onion powder

    • 1 tsp garlic powder

    • 1 tsp parsley (I usually use dried)

    • Sriracha sauce -- I do a few drops for the kids and I and then quite a bit more for my husband. It just depends on how much heat you like!

    • Salt to taste

    Procedure:

    • Preheat oven to 350.

    • Season chicken with garlic powder, onion powder, salt, parsley and a table spoon of butter on each.

    • Bake for 25 minutes.

    • While the chicken is baking... cut the tops of the bell peppers off and rinse the seeds out. Also, you can start melting your butter in a sauce pan on low. Once the butter has melted add your Sriracha and stir.

    • Once the chicken is done take it out of the oven and with two forks carefully shred it.

    • Pour the butter/Sriracha mixture over the chicken and stir until the chicken in evenly coated.

    • Stuff the peppers with the chicken and place in pan to bake-- I like to use my muffin tin for the peppers, it holds them up well.

    • Bake another 15 minutes until bell peppers are soft.

    My family likes a side of caulirice served with this meal, but I am sure it would be great with regular rice or tortilla chips too!​
