Paleo Almond Cookies

These cookies are my FAVORITE sweet! You should make them, like right now!!


  • 1 cup plus 3 tbs almond flour (could need more depending on the thickness of your almond butter)

  • 1/2 cup almond butter-- I like it with salted, smooth almond butter best

  • 1/4 cup honey

  • 2 tsp vanilla

  • Dark chocolate chocolate chips or unsweetened cocoa powder


  • Preheat oven to 350.

  • Combine almond butter and honey in a bowl.

  • Add vanilla and mix in until you have a smooth consistency.

  • Slowly add the almond flour and mix. The consistency shouldn't be crumbly and dry, but it also shouldn't be too sticky.

  • Add the chocolate chips or cocoa powder and mix.

  • Roll into balls-- I usually do about 6 large or 12 small cookies.

  • Bake large cookies for 12 minutes and small cookies for 10 minutes.

  • Serve with your favorite milk!
