This salad is one of my favorite things to make with the leftovers from my whole roastedchicken. It's just so yummy! I mean, it has bacon in it, and who doesn't love bacon? It's also a Paleo and Whole30 approved recipe as long as you use bacon and mayonnaise that is approved.
Left over chicken from last nights whole roasted chicken, or 2-3 chicken breasts
1/2 cup or a generous handful of cherry tomatoes cut in half
2 TBS mayonnaise
One package bacon
Salt to taste
Cut bacon into small pieces, and fry in a pan. Set aside.
Shred cooked chicken.
Chop cherry tomatoes in half.
Chop green onion.
Combine all ingredients in a bowl and mix together.
My family likes it wrapped in lettuce and served with steamed broccoli and a side of fruit.
