Oatless Oatmeal

I really love a hot bowl of oatmeal on a cold, rainy day. When I started eating Paleo I quickly wanted some sort of substitute, and an option other than eggs. One of my favorite things about this recipe is that a little goes a LONG way. It doesnt take much of it to fill me up, and it's one that sticks with me through the morning! Here's what I came up with!

Ingredients

  • 1/2 cup raw almonds

  • 1/2 cup raw walnuts

  • 1/2 cup raw cashews

  • 1 ripe banana

  • 1 tbs cinnamon

  • 1/2 tbs unsweetened cocoa powder (optional)

  • splash of milk of your choice

Instructions

  • The night before you want to make the oatless oatmeal soak the nuts in a bowl of water.

  • In the morning drain the water and rinse the nuts until the water runs clear,

  • In a food processor blend the the nuts, banana, cinnamon, and cocoa powder until you have a pretty smooth consistency. I personally prefer it a little chunky so I don't have to process it long.

  • Heat the portion you want in a pan on the stove top, or in the microwave.

  • Splash some milk in to make it the consistency you like.

  • Enjoy!
